Mackerel Puff Pastry with Raisins
500 grams of frozen puff pastry, thawed. Flour.
For the filling:
800 grams of small mackerels, headless and open. 50 grams of raisins. 4 slices of sliced bread. Basil. Lemon. Olive oil. Pepper grains.
Spread the puff pastry on a floured surface.
With the tip of a knife, draw the shape of a fish and cut it out, put it on a baking sheet on aluminum foil and let it rise in the oven preheated to 200º for about 15 minutes.
In the robot, mash the sliced bread with the basil leaves and a little lemon peel.
Remove the puff pastry from the oven, remove the central part, leaving enough space to fill.
Sprinkle the bottom with the breadcrumbs, raisins and cover with the mackerels open like a book.
Drizzle with a little olive oil and pepper and put in the oven for 10 minutes, so that the fish is done.
