Strawberries Gratin with Vanilla Extract
750 grams of strawberries. 100 grams of icing sugar. A few drops of vanilla extract. 4 tablespoons of lemon juice. 50 grams of butter. 2 eggs separating the whites. Grated lemon. 50 grams of flour. 40 grams of chopped almonds.
Wash the strawberries, let them marinate with the 50 grams of icing sugar, the vanilla extract and the lemon juice for 2 hours in the fridge.
Strain them and save the juice. Put the strawberries in the ovenproof dish and with the butter and flour, prepare a sauce with three-quarters of the juice.
Add the icing sugar and lemon zest. Remove it from the heat, mix the yolks with 2 tablespoons of sauce and add the rest of the sauce, beat the whites until stiff and add them to the sauce.
Cover the strawberries with this mixture and garnish with chopped almonds before putting in the oven for about 10 minutes.
